Cilantro Lime Shrimp

This is a great recipe for nights when you need a quick and easy dinner. The whole thing comes together in less than 15 minutes, and is a great building block for a number of dinners. Use these shrimp on top of a salad, in tacos with coleslaw and avocado, or as a base for fajitas. Buy peeled and deveined shrimp from the grocery store to save you the extra time.

Cilantro Lime Shrimp
Makes: 4 servings
Prep Time: 5 minutes   Cooking Time: 10 minutes   Total Time: 15 minutes

Ingredients:
1 lb peeled and deveined shrimp
1 tbs vegetable oil
3 cloves garlic
2 limes, zest and juice
1/4 cup freshly chopped cilantro
salt and pepper to taste
pinch of red pepper flakes

Directions:
1. Heat a large saute pan over medium high heat. Add the vegetable oil and the garlic, and saute for a minute or so to sweat the flavor out of the garlic.

2. Add the shrimp, lime zest and juice, and the red pepper flakes to the pan and cook the shrimp for three minutes per side. Remove from the heat, add the cilantro and give it a toss to coat, and season with salt and pepper to taste. Serve immediately.
