This is absolutely one of my favorite recipes that I’ve ever posted on Cooking in Red Socks. I feel like for a Jewish girl that grew up with no pork in her house, this recipe is quite an accomplishment. It represents everything I love about cooking and combining flavors. The Spicy Pulled Pork is meaty, spicy, and fatty. The acidity and sweetness from this salsa recipe complement those flavors in a big, bad way. This. Recipe. Is. So. Good. It belongs on a restaurant menu. I’m not one to brag too much about my recipes, but seriously. Everyone must eat these tacos or they haven’t really lived life to the fullest.
Spicy Pulled Pork Tacos with Kiwi and Black Bean Salsa
Makes: 6-8 servings
Prep Time: 20 minutes Total Time: 20 minutes (pork cooking time not included)
1 can black beans, rinsed and drained
2 kiwi, small dice
1/4 cup red onion, minced
1/4 cup cilantro, minced
1 poblano pepper, seeds and stem removed, small dice
½ jalapeno pepper, seeds and stem removed, minced
1 clove garlic, minced
juice one 1 lime
1 tsp vegetable oil
salt and pepper to taste
12 + flour or corn tortillas

queso fresco cheese, crumbled
sour cream, for garnish
cilantro, for garnish,
lime segments, for garnish
- Prepare all of the salsa ingredients in and gently mix together with a spoon. Season to taste with salt and pepper.
- Prepare the additional taco garnishes and serve taco-bar style for your guests to make themselves.
