Salted Butterscotch Hot Chocolate

Hot chocolate is best made by taking high quality chocolate and grating it. The smaller, flaked pieces melt into warm milk much better than chips or blocks. Doing it this way also prevents separation as the hot chocolate sits for a period of time. I wanted to spruce things up a bit, so instead of making plain hot chocolate I made salted butterscotch hot chocolate. I’m not going to lie to you, it’s freaking delicious. What is the difference between butterscotch and caramel? Caramel is made from cream or milk and granulated sugar, while butterscotch is made from cream or milk and brown sugar. Butterscotch gives you a stronger flavor, which is why I chose to use it. You can use less and still have a bold addition to your drink.

Salted Butterscotch Hot Chocolate
Makes: 2 servings
Prep Time: 20 minutes    Total Time: 20 minutes

½ cup grated dark chocolate (use a good quality)
2 cups milk
⅓ cup butterscotch chips
2 tbs heavy cream
⅓ cup heavy cream
1 tbs granulated sugar
1 tsp vanilla extract
Sea salt
1 oz butterscotch schnapps, optional


1. Start by making the whipped cream. Whip the ⅓ cup cream, one tablespoon sugar, and vanilla extract in a mixer on high speed for 3-4 minutes, or until it is scoop able whipped cream. Remove from the mixer and place in the refrigerator until you are ready to use.

2. Heat the milk over medium heat until it starts to steam. Add the chocolate and turn the heat to low or off all together. Whisk the milk into the chocolate until it is smooth and completely mixed together. From here give it a little taste to make sure it is to your liking in sweetness and strength of chocolate. Cover and keep warm.

3. Heat the butterscotch chips and the 2 tbs of heavy cream in a microwave safe ramekin or small dish for about 20 seconds. Stir and continue to heat until the butterscotch is melted and a pourable consistency; you can add more cream as desired.

4. Pour one tablespoon of butterscotch into the bottom of each of the mugs. Add a few flakes of sea salt. Pour 1 cup of hot chocolate into each of the mugs. Add the schnapps if you are spiking your drink. Top with a big dollop of whipped cream, a drizzle of the butterscotch, and another few flakes of sea salt. Serve immediately.
