When I first saw Pinterest images for this dip, I just didn’t really get it. The thought of having potato, even mashed, in a dip just seemed odd. But I am here to tell you it isn’t odd… it’s pretty freaking awesome. Loaded Baked Potato Dip is truly the manly man’s ultimate football watching appetizer. It’s totally filling and hearty, which is exactly what everyone wants and needs on a chilly football Sunday. Serve this with thick cut potato chips for the perfect Sunday snack.
Loaded Baked Potato Dip
Makes: 6 servings
Prep Time: 20 minutes Cooking Time: 15 minutes Total Time: 35 minutes
Ingredients:
1 potato, peeled
4 oz non-fat Greek yogurt
4-6 oz light sour cream
1 large shallot, minced
½ cup + 2 tbs shredded sharp cheddar cheese
3 slices turkey (or regular) bacon, cooked and finely chopped
3 chives, minced
salt and pepper to taste
Directions:
1. Preheat the oven to 350 degrees.
2. Roughly chop the potato and put it in a small pot with cold water. Add a pinch of salt. Bring the water to a boil and cook for 10- 15 minutes, or until the potato is tender. Strain the potato and chop it into small, bite-sized pieces.
3. Mix the potato, sour cream, and yogurt in a medium-bowl. Add the shallot and most of the cheese, bacon, and chives, setting aside a bit of each for garnish on top. Mix well and season with salt and pepper.
4. Place the dip in an oven safe ramekin and bake for 15 minutes. Remove from the oven and top with the remaining bacon, chives, and cheddar. Serve hot with potato chips.
