Jalapeno Popper Dip
Makes: 6 servings
1- 8 oz package of ⅓ reduced fat cream cheese
1 cup non-fat Greek yogurt
7 jalapeno peppers
1- 4 oz can diced green chilies, drained
½ cup Mexican cheese blend
3 cloves garlic, minced
1 tsp cumin
salt and pepper to taste
sliced bell peppers
1. Preheat the oven to 375 degrees. Spray an 8 x 8 inch baking dish with cooking spray.
2. Slice the jalapenos in half lengthwise. Remove the seeds and stem from each half. Set one half aside for garnish. Mince the remaining jalapenos and garlic.
3. Mix the dip ingredients together in a large bowl. Season to taste with salt and pepper.
4. Pour the dip into the baking dish. Bake in the oven for 20 – 25 minutes, or until the dip is nice and bubbly.
