Ingredients:
1- 2 lb sirloin steak
2 red onions, sliced into concentric circles about ½ inch thick
⅓ cup gorgonzola cheese, room temperature
zest of 1 lemon and juice of 1/2 of the lemon
1 tbs vegetable oil
salt and pepper to taste
Instructions:
1.Heat the grill to high heat. Lightly grease the grill with oil so that the steak doesn’t stick.
2. Toss the onion rings with the olive oil. Season the steak on both sides with salt and pepper.
3. Grill the onions and the steak for 10-15 minutes for a medium doneness. Flip the steak only once- this helps keep the juices in and gives you a much better result. Remove the steak from the grill (you can leave the onions on for longer if they need more time) and let the steak rest for 5-10 minutes lightly covered with foil.
4. When you are ready to serve, toss the hot onions into a bowl with the gorgonzola, lemon juice, and lemon zest. Season to taste with salt and pepper. Slice the steak on the bias into ¾ inch slices. Serve the onion mix over the sliced steak. The leftovers can also be used for delish sandwiches the next day!!
