Grilled Ancho Chili Corn on the Cob

Makes: 4 servings
Prep Time: 10 minutes   Cooking Time: 10 minutes   Total Time: 20 minutes

4 ears of corn, husks removed
½ can of chipotles in adobo sauce
1 tbs honey
juice of 2 limes
2 tbs butter, room temperature
1 garlic clove, minced
salt and pepper to taste

1. Preheat the grill to high.
2. Blend the chipotles, honey, lime juice, and garlic in a food processor. Blend until the ingredients are minced. Pour the puree into a bowl and use a spatula to combine with the butter.
3. Lay the corn on a cookie sheet and use your hands to spread about 1 tbs of the butter mix onto each ear of corn. Season with salt and pepper.
4. Grill the corn for roughly 10 minutes, rotating it onto a new side every 2-3 minutes.
