Ok, so it’s the Monday after the Super Bowl. Maybe you had one too many drinks or one too many snacks. The Super Bowl is not exactly known for being the healthiest eating day of the year. Today is the day to get back on track, and I am doing so with this awesome winter salad. Normally I am not a huge advocate of salads during the winter. I want warm comfort food and rarely do cold veggies sound all that appetizing. So when we ate this salad the first time, and then ate it again, and again, I knew it had to be on the blog. It’s easy and filling, but most importantly it gives a winter salad lots of flavors and textures. My favorite ingredient in the lemon stilton. “What are you putting in it?” says my loving mother. “Isn’t stilton really stinky cheese?”. Yes, stilton is normally one of the stinkier cheeses out there. But lemon stilton is something different all together. It’s sort of a crumbly cheese. It tastes mild with a nice sweetness and subtle lemon flavor. Look for it in the artisan cheese section. It’s a new find that I promise you’ll enjoy.

6 cups lightly packed mixed greens
1/2 cup pecans, toasted
1 red pear, thinly sliced vertically, core removed
1/2 cup pomegranate seeds
3 oz lemon stilton cheese, crumbled
2 tbs apple cider vinegar
1/4 cup vegetable oil
1 tbs honey
juice of 1/2 a lemon
salt and pepper to taste
- To make the dressing, whisk all of the ingredients together in a small bowl. Drizzle the oil into the mixture, whisking as you drizzle it in, to make an emulsion. Season to taste with salt and pepper.
- Lightly toss the ingredients of the salad together in a large bowl. Toss with dressing just before serving.
