Beet the Heat Smoothie

As I posted last Friday, our trip to Buffalo was incredible. We saw Niagara Falls, ate local treats like the original buffalo wings and beef on weck sandwiches, and got to see the best of the best in AAA baseball. There was one thing I did not post about. I was out for a run one of the days and saw a smoothie shop! As you probably know by now, I am on the smoothie train this summer. I went in and was looking for something like my Lean and Mean Green Machine Shake…. spinach, banana, maybe some yogurt. Just a little something to tide me over until the post-game dinner party. I asked if they could take a little of this, a little of that, and when I went to pay for it, the smoothie was $8.50?! Are you kidding me?! That’s an entire meal somewhere! All I got was wheatgrass, beets, and bananas with ice! I was so upset about it, that I decided to make this version right when we got home from our trip. Beets, spinach, bananas, cucumber, and a little milk to give it some creaminess. The perfect way take care of that heat in the summer without the expensive price tag.

Makes: 1 smoothie
Prep Time: 5 minutes    Total Time: 5 minutes

1/2 cup beets (I would just buy canned since you’re blending them)
1/2 cup cucumber
1 big handful of fresh spinach leaves
1/2 banana
1/3 cup almond milk
6 or so ice cubes

  • Peel the cucumber and remove the seeds with a spoon. Roughly chop into bite-sized pieces along with the banana and beets.
  • Place the beets, cucumber, spinach, and banana into a blender. Pulse until the fruits and vegetables start to break down.
  • Add the milk and blend until smooth.
  • Add the ice, use the ice crush setting, and blend until smooth.
  • Drink immediately.
